A tale of Two Tomato colors

So everyone knows a Roma Tomato, yes? One ingredient of easy-peasy Caprese Salad, the base of a great marinara, or one of any other number of uses.

But . . . if you can't wait for those Romas, what are you to do? One word for you. Actually . . . two. Cream Sausage.

We eat these about 4 weeks before the Roma. Just as sweet, and extremely prolific.
